You can retire but choose switch roles, pick a non controlled team to take over fire their coordinator the retire again switch roles take your original team back and hire that coordinator. Go to members or users teams,invite a friend have them fire the oc or whoever for the team yu pic and yu just sign them.

This worked with playing as coach for certain. At franchise menu tab over to 'Options' > User Teams. > Create a new character and just pick a team and 'start playing'. > Go back to user teams and switch to newly created coach. > Manage Staff at 'home'. > Fire whatever coordinator you need. > Swap to your main and hire them.

Once the season ends and your in off season staff go right into the staff menu and fired your OC and hire someone else right away. The OC section will be full of fired coordinators the computer isn't interested in and you can complete the off season and go into the next year without being stuck in the no OC to hire glitch.
