Yes it is obvious if you are looking at a second screen. They cant see that you are working in another window, but it's pretty obvious when you aren't looking towards the camera. Just move the camera over the screen you use to browse reddit take notes. It looks like you are still focused on their lecture.

Tl;Dr you should be fine. Actually professors can see if you leave the canvas page. I’m currently a TA and I just checked a quiz submission and I’m able to see it.
