I think dolphin is for plain Wii emulation (and game cube). Cemu is for Wii U. I think breath of the wild is for switch and Wii U so Cemu is your only choice. Definitely Cemu, BotW isn't available on Wii and so on Dolphin, and Yuzu, the Switch emulator, doesn't work at all on M1 Mac. And you can expect some performance issues on M1, Cemu ...
