Whilst I've beaten BotW on Switch, I still have to 100% the shrines and a few side quests and was looking to do so on Cemu so I could play with mods. I've looked at the save editors mentioned around here, but none seem able to mark which shrines I've completed.

You could also use a save editor I guess, since Epona can't be obtained by normal means apparently.
